Americans today definitely have a love affair with Mexican food. Not so long ago Mexican Restaurants were found only west of the Mississippi. Today every major city has Mexican Restaurants as well as most small towns. The Taco is the new Hot Dog and Salsa is becoming more popular than ketchup. But as Americans become more health conscious they worry about the unhealthy way Mexican food tends to be prepared north of the border. Third, when choosing a Mexican restaurant I suggest you choose a small family owned restaurant that specializes in authentic Mexican dishes rather than going to one of the large advertised chain Mexican Restaurants, because these establishments tend to prepare foods that have been changed to satisfy the unsophisticated American palate.
